Strawberry Apple’s Cream Cheese Pie


Belum dipotong. Cukup untuk 6 orang makan...

Semalam suami ada kelas sampai 12 am. Duduk2 depan TV bersama2 anak, aku terasa lebih baik buat suatu yang lebih berfaedah, tambahan pula tak de apa2 rancangan yang menarik di TV semalam. Teringatkan 2 biji epal yang tergolek atas meja makan tak termakan (pemberian jiran sempena CNY), straberi kering dalam fridge pemberian mak mertua dan sedikit cream cheese lebih daripada buat cheese cake terasa pulak bestnyer kalu aku buat cream cheese tart/pie. Aku melangkah ke dapur diikuti anak2. Aku buka peti ais dan mereka pun menyibuk. Si kecil capai yogurt yang masih berbaki sedikit saja dalam bekas dan si kakak capai solivite.

Aku membelek resipi yang pernah aku cuba namun sesetengah ramuan tak mencukupi untuk membuat cream cheese pie, especially sebab tak de fresh cream. Namun, itu tak mematahkan semangat aku...Hehehe...yang penting ada fresh milk. Setelah seketika aku pun memulakan misi. Bermula dalam 9 lebih, akhirnya cream cheese pie aku selesai dalam 10.30 pm.

Resepi aku adalah seperti berikut:



Pie Crust

125 g soften butter
40 g icing sugar (can be replaced with white sugar)
1 egg
220g all purpose flour
½ tsp vanilla essence
A pinch of salt

1. Combine flour, salt and sugar into a bowl and stir well. Add in soften butter and stir with fork until crumbly. Stir egg and vanilla essence in another bowl and pour into the flour mixture. Using hand, knead all the ingredients to form a ball and chill the dough in refrigerator for 30 to 60 minutes.
2. Preheat oven to 350 degrees F (175 degrees C).
3. Roll out to line an 8 inch flan ring, or tart shell. Bake in preheated oven for about 15-20 minutes, or until ½ baked. Allow to cool.

Filling

125 g cream cheese
1/3 cup icing sugar
½ cup fresh milk
1 egg
1 tsp lemon juice
1 tsp vanilla essence
A pinch of salt
2 tbsp all purpose flour

1. Whisk cream cheese and sugar until smooth and fluffy. Add fresh milk, and continue whisking until smooth and combined. Add egg and continue whisking until slightly combined. Add lemon juice and vanilla; mix well. Add flour and salt until just incorporated.
2. Pour into the half baked pie crust and bake in the 175 degrees C oven for 20 to 25 minutes.

Topping

10 strawberries
2 medium apples (thinly sliced)
¼ cup white sugar
¼ cup water
2 tbsp hot water + 1 tbsp instant jelly powder
1 tbsp cornflour + 2 tbsp tap water
Dessicated coconut (as u like)

1. Incorporate 10 strawberries (fresh or dried) with 2 apples (thinly sliced), ¼ cup white sugar and ¼ cup water into a non-stick pan.
2. Cover the pan and bring the mixture to boil, lower the heat and wait until the liquid is reduced to syrup.
3. In a bowl, mix ¼ cup hot water and 1 tbsp instant jelly powder and pour into the pan.
4. Combine 1 tbsp cornflour and 2 tbsp tap water, stir until combined and pour the mixture into the pan.
5. Continue stirring until the liquid inside the pan reduce again to syrup and turn off the heat.
6. Wait until the syrup is slightly cool before pour and spread into the baked cheese pie. Lastly, sprinkle dessicated coconut as u like.
7. Cool the cream cheese pie before serve.

Sambil-sambil buat tue sempatla aku tidurkan kedua-dua anak, si kecil tidur dalam 9.30 pm manakala si kakak sempat buat cheese tart kecil utk dia dan tidur dalam 10.20pm.

Husband sampai rumah pukul 12.15am bertanya kenapa rumah bau wangi macam aku masak sesuatu...Hehehe..itu bab yang paling aku suka tentang baking, seluruh rumah berbau wangi..Sebelum tidur aku potong 2 hiris untuk aku dan suami dan makan bersama-sama ais krim...Syok betul! Petua untuk bertambah chubby..huhuhuu..


Dihidang dengan ais krim vanilla...


Pie kecik Kakak Iman, dia suka makan ngan ais krim dan sirap coklat..
